Accepting credit cards, warehouses, and shipping and fulfilling orders
I had previously contacted Shopify support because I needed to change my legal name and birth date. It has been almost a week and I have still no reply. I was wondering how long it takes for them to get back?

It sounds like this is in relation to your Shopify Payments account. When it comes to updating your account information for Shopify Payments, for security purposes this is handled by a specialized internal team. The turnaround time for our specialized teams differ and is dependent on their current support ticket volume, amongst other factors.
I can assure you however that our team intends to support merchants and reply with any updates as quickly as we can. At times, this may take a bit longer than expected to ensure that proper steps are being taken, in order to best address the situation for our merchants.
I understand that it can be frustrating to wait, but if your ticket has been escalated to our specialized team's queue, then rest assured that they will provide an update as soon as they can. Thanks for your continued patience here, we really appreciate it.
