How to add collection points without splitting inventory

I'd like to add 2 collection point options at checkout so customers can have the option of shipping or collect at point 1/collect at point 2. I only have 1 'warehouse' so do not want to split my inventory. All inventory is picked at the same warehouse but the order can be collected at 2 different point (or shipped). When I try to add new addresses, it wants to split my inventory. How to I create the pick up points while keeping all inventory in 1 place?
