How do I change my settings so that my drop shippers  can take the shipping & their portion out of the payment on Shopify ?

Great question! While every dropshipping company has their own workflows on capturing payments prior to order fulfillment, this setup isn’t currently available on Shopify platform. You can get in touch with your dropshipping company and let them know your expectations.
