Is it possible to manually fulfill an order without shipping labels?

Good morning!

I had a question about fulfilling an order manually without the use of shipping labels. I want to start a store for selling organic, sod grass in which I call the sod supplier and set up the delivery for each order after I have received payment from the customer. By doing so there isn't a way to use shipping labels. Is this at all possible?
