Is it posssible to set up specific payment options for certain products or collections?

I would like to start selling knives on my webiste.  I see that it is allowed but I won't be able to use shopify pay to make these sales.  That's okay, I can use another form of payment processing.    Is it possible to set up a paypal only option for these specific products?   I just don't want to be suspended.
