Migrating from old platform to Shopify. How do I import unpaid orders not fulfilled yet?

Like everybody else during the pandemic we have a number of orders that are backordered and we have not charged the customer yet?  How do we import those unpaid orders so we can bill and fulfill once product is in stock?
