Open an LLC in EU or USA for shopify payments as a non resident

I'm not a resident neither of EU country nor of the USA but I need to connect Shopify payments so I'm thinking of setting up a company somewhere in the supported countries

Have anybody here faced such a problem? If yes – how did you deal with it? What are the most friendly countries to open a company as a non resident time-wise and tax-wise?
