Accepting credit cards, warehouses, and shipping and fulfilling orders
I have marked an order on hold due to waiting on inventory replenishment. Shopify shows the customer payment as paid and will show up in my bank account soon. Is this right? Is there a way to postpone the payout until the order is marked fulfilled?

I can confirm this is expected behavior, as payouts and fulfillment are not directly linked in this way. Check out our help doc here, which explains order statuses. In regard to postponing this payout, as it is already in transit to your bank, then it is not possible to postpone it.
May I ask if this is a common occurrence on your store? It might be worth setting up preorder or out of stock on your store with a pay later option. Here is a helpful blog on this very topic and how to set that up on your store!
