Organising Orders into intended shipping days

Hi, 

I manage a perishable food business and we ship items to customers around the country. As such we receive orders well in advance right up to the day before a customer wants them but as the items are perishable we ship on specific days to adhere to courier, customer and operational constraints. As such I am wanting to organise orders as they come in and assign them to a specific dispatch day. And then as that day comes around the Operations Team can access that bundle of orders and action knowing they have all of them booked onto the right day. This is of particular interest around major moments like Christmas/Valentine's Day but also to improve day to day operations. I have had a hunt around the help/support documents but can't see anything with regards to this set up. Can anyone point me in the right direction?
