Accepting credit cards, warehouses, and shipping and fulfilling orders

Thanks for reaching out here with your question.
Yes the Order ID Format can be modified from the admin. Shopify automatically generates sequential numbers for all orders. The first order number assigned is always 1001 and each subsequent order is automatically incremented by one, i.e., 1002, 1003, etc.
If you would like to change that, please log in into your admin, head to Settings > Store details and scroll down to Order ID format. See my screenshot below.

The OP was referring to Purchase Order numbers, not Order Numbers for customers. Is there a way to set the starting PO number?

To answer your question, the option to customize the PO number is currently not available.
Nevertheless, I can see how beneficial this feature would be though, so it is certainly something I will submit to our team of developers to consider as an update to the use of Purchase Orders on your behalf. Can you share with me why you think this would be beneficial to you and your business?
