Accepting credit cards, warehouses, and shipping and fulfilling orders
Is there a way to remove the shipping from the checkout page
ex if Im hosting an event or class in store and would like to sell it as a product. I would like customers to have the option of just purchasing the event with no shipping/pick up details
or can we at least change the text from "Pick up" to something else?

You can remove the shipping requirements on your checkout page for non-physical products, such as services or digital goods. Simply change the product details and uncheck the field, This is a physical product, located under the Shipping section. Once that's done, the checkout will only need to collect the billing information from customers.
Here's what the field looks like when adding/editing a product:
Do you sell classes often? Or, do you sell a combination of physical and non-physical products on your store?

it's a combination of physical and non-physical products.
And more specifically the product can be either completed as part of the event(in which case no shipping is required) or as a completed and able to be a shipped product. Is there a way for the checkout page to receive input from a conditional variable in the cart or product page?
to reword that
I have an app(Bold) that allows me to set the conditionals on each product but can I pass that information to the checkout page somehow?

You can use an app, like Digital Downloads, to attach a digital variant to your physical product and it would allow customers to choose the variant they'd like to purchase. The digital variation would not require capturing a shipping address and the app can also handle the delivery of digital goods. If you're interested, we've got a guide to help you with setting up Digital Downloads as well.
For selling at events, you can use the Shopify POS to help your customers make purchases as opposed to having them place their orders online. Not only would you be able to control the type of information you'd like to capture from your customers, you can also lower the transaction/credit card processing fees as in-person sales do have a slightly lower fee.
Most BOLD apps are fully integrated with the Online Store and the Shopify POS, so the conditional variables shouldn't be an issue. However, as they are a third-party app, I would recommend double-checking with BOLD directly so that you have the most accurate information pertaining to their specific app. You can reach out to BOLD directly through their contact information found in the Support section of their app's page.
Could you share more details about the conditional variables that you'd like to push to the checkout page?

The POS may be the solution here, I just need to do some more research.
I run a art studio typically patrons would come to the studio and do their projects as a class.
However Im trying to offer a way for my customers to have the option of picking up a project kit or having a kit/completed project delivered to them
so conditionals looks something like:
How would you like to make this project?
Paint at a workshop in our studio.
Paint at a private party.
Maker Kit To-Go to paint at home.(this would require optional shipping/pickup)
Painted for you by an instructor.(this would require optional shipping/pickup)

The POS solution would definitely be ideal for any in-person sales. However, for picking up or delivery, you can set up pickup and local delivery for your store. This way, you don't need to create separate products for them and customers can choose their preferred method, although you may still want to separate the kits and the painted by instructor ones as separate variants or products.
You may want to consider creating the classes as a separate product, so you can implement a calendar for customers to choose their dates. You can do this by adding a delivery date picker or by using a third-party calendar app, such as BookThatApp. If you're using a Shopify-supported theme, then our Support team can help you with implementing the delivery date picker - which can be reworded for choosing class dates. Nevertheless, if you'd like to explore the latter, you can also reach out to the app developer directly through the contact information found in the Support section of their app's page for assistance.
