Shipping Rates not working

I have set up different rates for products.  For example standard shipping and express shipping.   But I want to set up "no shipping available"  as some of our products are  huge (large clocks) or very breakable.  I want the product on the website so local customers can see what we have but I don't want to post as in the past these things even though packed well have broken in transit.   I thought I had it covered but it seems to come up with an old option (which I deleted awhile ago) - large or breakable.   How do I get this fixed.  I have added my stock to the No shipping available postage rate but they keep coming up as Large or breakable even though this has been deleted.  I have also taken any stock I don't want shipped - to be a not physical product. Help
