Accepting credit cards, warehouses, and shipping and fulfilling orders
Do you know if Shopify Payments is available in Poland or if it will be soon? If it's not coming in the near future, do you know of any solutions for dynamically changing currency based on location?
As of my last knowledge update in September 2021, Shopify Payments was not available in Poland. However, please note that circumstances can change, and new updates may have occurred since then. I recommend visiting the official Shopify website or contacting their support to get the most up-to-date information regarding the availability of Shopify Payments in Poland.
If Shopify Payments is not available in Poland and you are looking for a solution to dynamically change currency based on location, you might consider using third-party apps or integrations. There are several currency conversion apps available on the Shopify App Store that can help you achieve this functionality. Some of these apps can automatically detect a visitor's location and display prices in their local currency.
If you're looking to implement a multi-currency payment gateway in your Shopify store, Stripe is indeed a popular and reliable option to consider. Unfortunately, Shopify Payments recently not supported in Poland. You can consider to install a third-party payment gateways like Paypal or Square.

As confirmed by other users on this thread, Shopify Payments is not currently available in Poland.
You can still however, select a payment gateway for Poland from this page here to get on track to start selling.
When it comes to multiple currencies, there are apps such as our free Geolocation App, Best Currency Converter and Currency Converter Bear that will allow users to browse in their local currency, but once they reach the checkout stage they will find that the prices are once again in the default store currency.
This is because it is currently not possible to sell in multiple currencies without Shopify Payments, so that is one limitation that can be found.

You can of course do that.
My recommendation here is that you set your default store currency to USD, if you're planning on marketing/selling exclusively in the US.
You will also be able to add shipping rates for the US only, as shown in this help guide here - so that customers outside of the US cannot checkout.
Just an important side note, I would recommend that even though your store currency will be in USD, you should still set the store country as Poland.
The reason for that is any payment gateway that you integrate with your store may at some point request documents for proof of a business/physical presence in the country you have set.
If you set it as USA, but you do not have documents to show that there is a presence in the USA, the gateway may be revoked and this can cause an inconvenience for you and your business.
