Taxes for international sales

Hi, I am based in Ireland, and whilst the website was originally for sales here, I've had orders from abroad. I also sell on Etsy, and the platform deals with all the various tax rates, collections, etc... It does not seem to apply on my checkout. How do I do this? ...and to be honest, I would have no idea how to deal with the money collected, keeping up with the various rates etc. Talking to my accountant, she was adamant that Shopify deals with all of it, but it does not make sense to me. What happens if nothing is set up? Any guidance is appreciated.
