Accepting credit cards, warehouses, and shipping and fulfilling orders
How can I see detail on payouts please. There is over 35% being taken out - what is going on, this can't be right?

I see you've tagged your post with the Shopify Payments label — but just to make sure, you're enquiring about payouts that have been processed on Shopify Payments, correct?
If that's the case, you'll be able to check the fees associated with your payouts via Settings > Payments > Click on the View payouts button. From there, you can see a table with your most recent payouts, which will include a column that shows the specific fees attached to each payout, as seen below.
On the same page, you can also click on a specific payout date in order to view more information about that particular payout. The Reference column will show you the order numbers that are included within that payout, and clicking on an order number will take you to the order page, where you can then scroll down to the Order timeline in order to view more information on the fees associated with that order:
Keep in mind that the fee amount will differ for each order, depending on the type of credit card used as well as the registration location of the card. This is important to note as domestic and international processing fees are different, so if a customer placed their order using a card registered outside of your store's region, then a cross border processing fee will be applied.
