Bricks and Mortar pre orders for Christmas

Hey,
We have B&M shop and an online shop that use the same inventory and I'm looking to be able to take orders in the shop via the POS app or in the dashboard that will allow orders to be taken for pick up at a later date without if adjusting the inventory.
Anyone have any tips?
