Buyers able to buy up all inventory within moments. How to slow it down to make it fair?

I am currently having an issue where every time new inventory items are added, they sell out immediately and then end up on ebay for a higher price the next day.

A handful of customers are able to swipe up new items almost instantaneously.

Any idea what is going on?

Probably a good issue to have! There are few apps available to limit purchase quantity. The other options are is to edit the theme code to limit how many products can be purchase at one time. Although, the buyer can just go back and repurchase so not sure if that will solve your issues.
