Can customers self-checkout with gift cards at a POS stand?

Hi, I'm looking to set up a stand, where customers can access a tablet, my products, and can self-checkout by using a gift card they have previously bought. I also want them to be able to add and subtract items from a list easily. Is this easy for customers to do without me being present? Thanks!
