When the card reader prompts a customer to choose a receipt option the email box is automatically checked and the customer has to uncheck it to proceed. Is there anyway to turn this off so it's not automatically chosen?

Unfortunately, as of 2025, Shopify does not provide a built-in setting to disable the automatic selection of the email receipt option on card readers. The system is designed this way to encourage digital receipts and reduce paper usage. However, here are a few workarounds you can try:
Since the default behavior cannot be changed in Shopify POS settings, the best immediate workaround is to train staff to prompt customers before finalizing whether they want an email receipt. A quick reminder can help prevent accidental receipt emails.
If you’re using a receipt printer, you can manually select the "Print Receipt" option before proceeding with the payment confirmation. This way, customers who don’t want an email won’t have to uncheck anything.
Shopify frequently updates its POS system based on user feedback. If this is something that negatively impacts your store’s workflow, you can submit a request through Shopify Support here and suggest adding a setting to disable auto-selection.
