You're correct that in Shopify, you can customize physical receipts per-location, but the "POS and mobile receipt" is a global setting that applies to all locations.
This means that if you make changes to the "POS and mobile receipt" settings, they will apply to all locations that use the same receipt template. You cannot customize the "POS and mobile receipt" settings on a per-location basis.
If you need to have different "POS and mobile receipt" settings for different locations, you can create multiple receipt templates and assign them to different locations. Here's how:
