Fulfill online orders: ship from warehouse, pick up from store (different locations)

Hi there, 

I wish to keep my 2 inventory systems separate (physical store and online store).

For online customers, I wish to give them the option between delivery and pick-up (from the physical store) - both are to be fulfilled from our warehouse inventory (/online store inventory). 

However, the issue is that Shopify locations/settings don't allow me to edit the pickup location from our warehouse to the physical store. If I do that, the online store will reflect inventory from our physical store instead - which is not what I want.

Can anybody help? Thanks!
