How can I create a sub collection for POS applications?

How do you create a sub collection?

This is strictly for a POS application, possibly going to an online store one day, so now I'm just looking at it from an organizational or reporting standpoint.

Like if I was looking to drill down & see how many men's hats I'm selling, etc.
