How can I sell only a portion of my total inventory item count?

Hi, i would like to have not all inventory off an item for sale. 

I want to have the inventory also as a item count. So i know how many items i have of a specific item. Then i want to sell like 80% of that number of 1 specific item.

How can i do this?
