How can I set up point of sale for a convention with regulated goods?

Needing help on figuring out point of sale for a convention I will be attending mid february

I purchased the 3 way card reader through shopify

buying a ipad tonight to use in conjuction with the card reader.

As I am in the ammo sales market its all regulated goods and have to be done through shopfiy and my ecommerce source for this.

2 questions I ask myself is

can I have the sales tax taken immediately through the sales transaction for the state of Tennessee ?

where can I read how to setup my ipad to work with the shopify on point of sales
