How to take an order with Pickup in store?

Hello,

We are selling print on demand products that we print and manufacture on our own. We have a physical store where we have a small inventory and where we do pickup for online orders.

We have a problem that when a customer comes to the store and wants to order something that is not available we can't create an order with Pickup in store. Any ideas?

It depend on the store rules and policy. I think most of the store don't allow this.
