Splitting or separating payments between States/countries

Hi all, so we are a shopify store in Australia and I want to be able to have payments from different states be captured differently.

So say a customer in Victoria orders online, the payment goes to person/account X.  If a person from New South Wales orders, payment goes to person/account Y.

Is something like this possible?
