Hi,
I am unsure why but the delivery option has disappeared from my website and is only showing the pickup option. Can anyone help?

I understand that the local delivery option has disappeared from your website. Since I don't have enough information to determine what might be causing this, so I'd recommend toggling (disabling and re-enabling) the local delivery feature in your Shipping & delivery settings to see if that can help resolve the issue. It's also worth noting that the local delivery option does not apply to accelerated checkouts (eg. Apple Pay, Google Pay, etc.) aside from Shop Pay, so it may be worthwhile to review the setup guide for local delivery as well.
