How to permanently set inventory_policy='continue' and inventory_management='shopify'.

Trying again. I have an issue when updating all products with the REST API. When I PUT or POST it overrides the "Continue selling when out of stock" settings for all products. Is it possible to permanently set these values or add it in my PUT or POST, without having to do another call with the product id to the variant api call and manually select all products in inventory and click "Continue selling when out of stock" ?
