About returning items for try before you buy

We purchase multiple items for try-on.
Then we ship them.
Only some items are returned.
In this case, I was planning to use the order edit api to delete the items before the payment is made, but I can't edit the order when the items have been fullfilled.

Is there another way to exclude some products from the payment?
