App Permissions and Customer Data - Google & YouTube, Microsoft Channel

Some of the major apps / channels are asking for access to customer data. Ex: Google and Microsoft

However, I'm not finding specific information on why they need this information and what they do with it. The links just lead to their generic privacy policies. Does anyone have more info on this?

Are we stuck giving all our customers' data to major companies in order to market our websites?

How do we keep up with privacy laws when each channel wants all this data?

Furthermore, these apps are asking for access to past orders as well, so there's no reasonable way to gain customer consent.

If a website outright asked me for consent to send my address to Google, Microsoft, Facebook, etc., I'd back out of there ASAP.
