I am seeing this shop with this domain 

app-security-02.myshopify.com

installing my app and sending webhook requests and then uninstalling sometimes.

Does anyone know what this is?

Note: the webhooks requests are usually not valid and error out because of not matching hmac.

this is a test shop from Shopify. It will test your GDPR mandatory webhooks.
