Customer info for Cart creation trigger

We building an app for abandoned carts. We are using checkout creation and order creation to monitor the delta.

The delta are the orders we action. 

We are reliant on the customer already having a profile with a mobile number saved. So if a new customer comes along, creates an account using email (not email) and abandoned a cart we are unable to action. 

Is there any way to monitor cart creations , where we can see the customer information they enter? Some customers might create a cart and previously not have attached a mobile number but they might have entered their number as part of the new cart creation. 

Any ideas?
