Facebook Access to my store and customer details

I'm trying to set up Facebook and Instagram shop and I'm concerned about what access FB has to my store and customers. It states that it can access personal details, alter products, payment accounts etc. Is this correct? 
I'm based in the UK and GDPR is a legal requirement, so I'm not sure I can agree to FB having access to everything.
