How can I add custom HTML select inputs to store's order page using Storefront Js?

Hi,

More of a technical question:

I want to add a couple of custom HTML select inputs (dropdowns) on the store's order page and allow the client to be able to pick a value on each of them while making an order. This most probably means that I'll have to persist the selected values in the order record's metafields. Is there any way to do this from the storefront - any special name to be set on the inputs OR can I do it in Js in a separate request from the order creation? If not, where can I persist these custom values if not in the metafields?
