How can I add more variety to sections in my premium theme?

Hi. I must be overlooking something. Sections and blocks appear to me to be the main building blocks of Shopify pages. The main value of the premium themes is the variety of sections available for the home page, landing pages, and product pages, but of course no theme has it all.

I have a premium them that met most of my needs, and I assumed there would be apps to fill in what the theme is missing. For example, a testimonial section, a multi-column section, etc. Unfortunately, I'm struggling to find that in the app store. I see plenty of page builders, but I want to keep my premium theme and I want to avoid the bloat of a page builder. Shopify's documentation mentions "app blocks" which add blocks to sections but also can be sections, but I see one relevant result for that keyword search.

What are my options? Am I using the wrong search words? Do I have to edit the code to get what I want (and risk mistakes or preventing auto updates)? Create something with the theme's html or liquid sections?
