How can I charge customers based on final product weight in my online meat store?

Hi guys, 

Looking for a solution for our online store - we are a  meat business and charge for product by the kilo.  Basically customer orders a product, staff prep order and we deliver at an arranged date.  

Problem we have is products never work out at the correct weight, always over and we’re sending extra meat out to customers at no extra cost.

Is there a solution to hold the card details, and charge on the final product weights once order is produced/finished?

This would save our business a lot of money each year.
