This is a great question! At the moment, you can only have up to 100 shipping profiles in total on your Shopify store. With that being said, I can definitely see the benefit of allowing you to have more than 100 shipping profiles for your online store. I am going to provide this as a suggestion to our developers as we appreciate the feedback.
