How can I streamline inventory and shipping date management for meal kits?

Hey all. I have a store selling meal kits. Our inventory / shipping date management is really difficult.

We produce the kits fresh to order each week and deliver on Fridays and Saturdays. At the moment, customers have to select a date on the dropdown for each item. I have the dates set up in Infinite Options but no way of managing the inventory, so we have to try and take those particular dates off sale as we go. It's a real faff. The person running our ads has said that I can't set up a variant for every date as it messes with his side of things.

Any ideas on a tool / work-around for this? Would appreciate it immensely - been trying to figure this out for actual years!
