After you have disconnected GMC Account ID in the Google Shopping and Youtube App, then simply delete the content api in GMC.
It should not re-appear.

This isn't quite the issue. The issue we are having is that when we disconnect the merchant link within the google & youtube app on our shopify, It also deletes our google ads link which is for all our ads performance tracking.
We want to use our new optimized feed within our merchant centre (not the default feed the merchant centre link within shopify makes) whilst still keeping the google ads link on our shopify for ads tracking etc.

As I don't see or can replicate your issues with my clients accounts. So maybe the app has issues, or you have a different version, I don't know.
