How does email collection work on Shopify?

Looking for details on how emails are collecting.  Not following how store has obtained almost 700 additional emails that are not marked for subscription. Exported and not counting spam. 

A few additional quesitons

- How can i see where they come from and date received? 

- Looking for a process that will reach out to them when that email comes in to ask then to subscribe.

Hello I want to contact one individual non-customer through shopify email who emailed the shop? Please can you help. They haven't subscribed or bought anything but did send an email to me. The email was forwarded to my personal email but I want to reply with business email not personal.
