I have hundreds of products that already have 4 main variants, with 5 sub-variants (style, and size). I want to add a top-level variant to this group of variants but this seems like an incredibly tedious task. I essentially want to add a first variant that will be called Depth with 2 options, then there will be the regular 4 style options under that, and 5 size options under that.
I have no idea how to do this efficiently for hundreds of products?

you can easily achieve this using shopify flow app
although you have to built the flow yourself

This is the conditional logic setting, 'Gift Selection' only show up when the 'Make it a gift' is selected
And the 'Select A Card' show up when 'Card' in Gift Selection is chosen.
You can apply this option set to multiple products at once, saving you time, especially if you have many products.
