How to remove custom apps from multiple stores and retrieve user data?

Hey,

I build Custom app that get and set data through Shopify API. My app is installed at multiple stores so when user uninstall app from his store i want to get that User data on my custom URL so that i delete that user from my database. Currently i am facing issues in getting that data. So if you have any solutions in your mind please share that or any idea that will be helpful.
