Limited edition, each product has a unique number on it ranging from 1-500 for example 432/500. 

We would like to offer limited edition products to customers, each product must have a unique number associated with it. Once bought, the selected number should disappear from the stock, each number can only be purchased once. 

Can someone suggest what app could be used to achieve this?

Would you like customers to be able to select unique numbers? If so, you could use one of the infinite variants apps to create 500 variants, each with a quantity of one.
