Yesterday I updated our website's portfolio with two projects and this morning all the photos are gone and the Enorm Image app is no longer responding. Any suggestions to recover the photos would be extremely helpful

Are you using an application for this? If yes and it is the Enorm app who's not responding, kindly try to reach out to Shopify support team to check if they can help you reach out to the app developer and provide any workaround.
