Verify a user owns shopify store in non-embedded shopify app

I am building a non-embedded shopify app that allows users to import a product into their store. I have an frontend that authenticates users with fire base (email/password). After processing authCallback and saving the offline access token in my database, how can I map the user (a uid) to the store that installed my shopify app?
