What's the best plugin for managing multiple options and variants?

Hello,

I am looking for the best plugin for multiple options and variants. I have one collection on my site that contains products that are 100% customizable. I need 7 options and about 30 variants for each. A very helpful lady from Shopify sent me links to some plugins BUT I would like to know which plugins work the best and are easiest to install. I am NOT a web developer and have no knowledge of coding or anything remotely similar. I hired an expert from Shopify to do the migration from the old site to Shopify but he has disappeared. Are plugins fairly straightforward or should I hire another expert?

I also need help with a "pay later" button for products.
