Adding more Filters on Icon Theme via Search and Discovery app

Hello everyone, I'm currently developping an e-commerce website with the Icon theme, I have digital products with a big need in filtering (on the storefront). I opted for the Shopify's Search and Discovery app, which lets me add Price and Product Type filters, which is perfectly fine, but I want a third filter, with different options that I need sorted in a specific order. I wanted to filter by Collections, but the app doesn't allow me to, the last option that meets my needs to a minimum, is to filter by tags (which makes no sense to have on the storefront too...).

The problem is that the options on this filter are automatically sorted in alphabetical order, which forces me to put letters at the beginning of each options to sort them...

I don't want to pay for an app just to do this simple thing, I had the idea to visually slice the first character of each option in javascript, but I didn't manage to do it.

Do you guys have an idea on how to resolve this issue ? Thanks a lot for reading through this
