Adding new product varient to theme (current winter updates)

I watched the new Winter Updates video but it is not clear to me if all of the new product variant options work on all themes? The video briefly mentions Dawn. We currently use the Studio theme.  I downloaded Dawn but am not seeing the winter updates to where you can add color swatches and additional variants.  Has anyone had success with this yet?
