Building custom front end storefront with Shopify api key

Can i build a website If i wanted to build my front-end site using JS,Html, css, and just use the shopify Api key and connect to shopify backend graphql? I'm not to comfortable with react or remix to use hydrogen and I don't want to use liquid. Or is this to much of a security risk on my part building it this way?
