Can I change variation titles from 'Colors' to 'Design' in options?

Is there a way to make options visible without their name being "Colors"?

Yes, just type design in the text box when you click on options.

If I understood you correctly, let's say a product has 7 designs, you want it to say 7 designs available.
If that's the case then I it's only doable by code if your theme doesn't support is.
